BBQ Peach Baked Chicken

So this meal is soooo simple and super yummy! It's a spin off Ree Drummonds Peach-Whiskey Barbecue Chicken with a few tweaks. First off the hubs really doesn't care for onions so we nixed that. Second we don't drink alcohol so I skipped over the whiskey. And a quick heads up....I'm not super picky about measurements! I use the terms "ish" and "splash" a LOT!

So here is what ya need -
  • a stove
  • an oven
  • a pan....is this too sarcastic??
Haha! Ok so for real this time,


Pre-heat oven to 300 degrees

  • Chicken breast - 3 or 4, just a smaller pack (Since it's just us two there are leftovers and this stuff heats up wonderfully!)
  • A splash of Olive Oil
  • 1 Tablespoon of buttah! I love me some butter!
  • 6-ish oz of BBQ sauce of choice (I use Sweet Baby Ray's) you can add more if ya like it saucy! 
  • 1/3-1/2 jar of peach preserves (the preserves pictured are delish! Downside is that I got them at the Christmas Tree Shop and their stock constantly changes)
  • 1/4 cup of water
  • Some peaches
  • 1-2 splashes of Worcestershire Sauce (Isn't that such an awkward word to try and say?!)
So that's all you need. I usually serve this up with some steamed veggies and rice....but we are working on losing that newlywed weight so no rice tonight!

So first thing is first about me, I am obsessive over chicken in my kitchen! I am always freaked out about salmonella even though I've never gotten sick over it. And I can't stand fat on chicken! I will obsessively sit there and cut off little strand of fat and tendons. Also tonight I am using thighs because the commissary did not have any chicken breast. Well they did have some but it was free range grass fed antibiotic free chicken that was a bit out of budget! 

So let me tell you about my newest favorite kitchen thing EVER!! My trusty iron skillet. I see why Rapunzel was so keen on hanging on to her's! You can literally make a meal with using just this one dish. You can fry, saute, bake and even cook steak in it. Super handy dandy! So next step heat up your stove top to medium heat. Then toss in that pat of butter and dash of oil and spread it all around. Once the butter is melted put the chicken in the pan and let it cook for 5-ish minutes till it's golden brown. Then flip to the other side.


 See! Now it's golden on both sides! Boom! Cooking is sooo easy...right!


Remove the chicken from the pan and set it to the side. Next you are going to pour in the BBQ sauce, peach preserves, water, Worcestershire sauce and some peaches. Now I usually make it without peaches mostly because I don't have peaches on hand (fresh or canned) But this time I had some canned peaches...well actually a fruit cup of peaches. So I tossed those in, you can skip the peaches, use fresh or add even more! That's a joy of cooking is you can kinda do what you want! 


Whisk that goodness all together. I say goodness when in reality it looks pretty icky! 


Add in that chicken and stir it around. Then you are going to cover it with foil and toss the whole pan into the oven for a hour and a half. Now let me tell you this stuff is going to smell sooo good. As I type this up now I can smell it and it is making me very hungry!


So pull that skillet out. 

"Careful! It'll be HOT!" - Captain Obvious 

 So I just kinda mildly shredded the chicken with a fork and mixed it around with the sauce. Easy to do cause it literally falls apart. YUM!
I served it up with some buttered and peppered greens beans and Ta Da!!


Aren't those plates so pretty?? My sweet husband picked them out. He's got skills!
